Easy Fried Rice

As the name would suggest, this Fried Rice dish is nothing short of easy – easy to make, easy to store and easy to pack. Not only is it all-things-easy, but it also tastes even better the next day, and kids love them!

Easy Fried Rice

Serves : 4
Prep Time : 10 – 15 MINUTES
Cooking Time : 10 – 15 MINUTES

Ingredients

  • Vegetable Oil – 2 tbsp
  • Garlic – 4 Cloves, crushed
  • Red/White Onion – 1, diced
  • Carrot – 1, diced
  • Basmati Rice – 3 Cups, pre-cooked leftovers
  • Salt – to taste
  • Peas – 1/2 Cup, frozen
  • Sweetcorn – 1/2 Cup, frozen
  • Egg – 3 – 4
  • Spring Onion – 2, chopped (optional)
  • Method

    – Heat the oil in a large pan over medium heat and cook the garlic, onions, and carrots for 4 – 5 minutes.

    – Increase heat to medium-high, then fold in the rice. Season with salt and cook until lightly toasted for approximately 5 minutes.

    – Add the peas and corn and mix until warmed through.

    – In the meantime, scramble the eggs in a separate pan over medium heat to your desired consistency.

    – Fold eggs into the fried rice, garnish with the spring onions (if using) and serve hot, warm or at room temperature.
