If you’re trying to make healthier choices, but can’t resist an occasional helping of your favourite red meat, this leaner cut or Filet Mignon is the way to go. Pair with roasted broccoli and your favourite potatoes to satisfy your taste buds, as well as those red meat cravings.

Method
– Preheat oven to 200°C
– Generously season the beef on all sides with salt and less so with some freshly ground black pepper.
– Heat a large pan over medium-high heat and add enough oil to lightly coat the base. When hot, add the filets to pan – the oil should be hot enough to create a loud sizzle (preferably use a cast iron skillet).
– Cook for 3 minutes undisturbed on the first side until nicely browned. Flip onto the 2nd side and cook for 2 minutes, until also nicely browned.
– At this point, add a slice of butter to the top of each steak and either transfer to an oven friendly dish or if using the cast iron, transfer directly to the oven.
– Cook in the oven for 6 – 7 minutes for a rare steak, 8 minutes for medium, 10 minutes for well-done.
– Transfer steaks to a cutting board and let them rest for 5 – 10 minutes before serving.
– Enjoy with mustard, potatoes and a salad for some freshness.
