Nothing says summer like corn! Add this salad to your summer meal plan rotation and give yourself something special to look forward to. Though not included in the recipe, serve with a side of fresh green chilies for a little added kick.

Method
– Dry grill the corn either in a pan or directly over the fire if you have a gas stove. Rotate frequently to avoid burning and to ensure an even sear on all sides. Once the corn is to your liking, allow to cool, then separate the kernels from the cob and set aside.
– As an added step you can stir the kernels in a pan over medium heat to ensure they are all cooked through.
– Season with salt and set aside.
– Place the sesame seeds in a pan over low heat to dry roast. Stir frequently to avoid burning. Once they reach a soft brownish colour, take off the heat and set aside.
– Once the corn and sesame seeds have cooled, mix all the ingredients in a large bowl, toss with the Asian Fish Sauce and serve.
