Chicken Salad Sandwich

Great as a meal, great as a school snack and great as a weeknight dinner. Give yourself a break and make use of your kitchen and pantry staples and put together the best chicken salad sandwich ever!  

Chicken Salad Sandwich

Serves : 4 – 6
Prep Time : 10 – 15 MINUTES

Ingredients

  • Chicken Breast – 1kg, Rotisseries Chicken Breast, cut into bite sized cubes
  • Slivered Almonds – 1/2 Cup, option to omit if packing as a school lunch
  • Mayonnaise – 1 Cup, or use Greek Yogurt for a healthier option
  • Mustard – 1 tbsp, Dijon Mustard
  • Raisins – 1/3 Cup
  • Spring Onion – 3 pc, thinly sliced
  • Fennel – 1 pc, finely chopped or thinly sliced
  • Fresh Parsley – 3 tbsp, finely chopped
  • Lemon – 1 pc, juiced
  • Salt – to taste
  • Black Pepper – to taste
  • Sliced Bread – 12 pc
  • Method

    – Place all ingredients into a large bowl and season with salt and pepper.

    – Mix everything together until well combined. Taste and season with more salt if needed. Then place in the fridge until ready to serve.

    – Spread generously in between the sliced bread to make 4 – 6 sandwiches. Cut in half and enjoy.
