This Chicken Pasta Salad is one of many pasta dishes that make for a great school snack. Healthy, filling and full of flavour; your child will most definitely be asking for more!

Method
– Bring a large pot of salted water to a boil and cook the pasta according to package instructions. Drain pasta, and rinse under cold water to cool. Transfer to a large bowl and set aside.
– Heat a skillet over medium-high heat. Add the sesame seeds, and dry roast stirring frequently until lightly toasted. Remove from heat, and set aside to cool.
– Pour the toasted sesame seeds into a jar with the vegetable oil, mayonnaise, soy sauce, vinegar, sesame oil, maple syrup, ginger, and pepper. Seal tightly and shake well to combine.
– Pour sesame dressing over pasta, and toss to coat evenly.
– Gently mix in the chicken, vegetables, coriander, and spring onions (if using).
– Serve warm or at room temperature.
