Chicken Pasta Salad

This Chicken Pasta Salad is one of many pasta dishes that make for a great school snack. Healthy, filling and full of flavour; your child will most definitely be asking for more!   

Chicken Pasta Salad

Cooking Time : 10 – 15 MINUTES

Ingredients

  • Penne Pasta – 1 Packet, preferably whole wheat
  • Sesame Seeds – 1/4 Cup
  • Vegetable Oil – 1/2 Cup
  • Soy Sauce – 1/3 Cup
  • Rice Vinegar – 1/3 Cup
  • Toasted Sesame Oil – 1 tbsp
  • Maple Syrup – 2 tbsp
  • Mayonnaise – 2 – 3 tbsp
  • Ginger Powder – 1/2 tsp
  • Black Pepper – 1/4 tsp
  • Rotiserrie Chicken – 3 Cups, shredded from the white meat
  • Carrot – 1/4 Cup, julienned (any vegetable of choice will do)
  • Green Capsicum – 1/4 Cup, julienned (any colour will do)
  • Fresh Coriander – 1/4 Cup, roughly chopped
  • Spring Onion – 1/4 Cup (optional)
  • Method

    – Bring a large pot of salted water to a boil and cook the pasta according to package instructions. Drain pasta, and rinse under cold water to cool. Transfer to a large bowl and set aside.

    – Heat a skillet over medium-high heat. Add the sesame seeds, and dry roast stirring frequently until lightly toasted. Remove from heat, and set aside to cool.

    – Pour the toasted sesame seeds into a jar with the vegetable oil, mayonnaise, soy sauce, vinegar, sesame oil, maple syrup, ginger, and pepper. Seal tightly and shake well to combine.

    – Pour sesame dressing over pasta, and toss to coat evenly.

    – Gently mix in the chicken, vegetables, coriander, and spring onions (if using).

    – Serve warm or at room temperature.
