You can’t go wrong with this household favourite, Chicken Mahammar; roast chicken over a bed of potatoes and garlic. Enjoy as is with a side salad or over a bowl of steamed white rice.

Method
– Place the chicken pieces in a large oven dish, along with the potatoes and garlic heads.
– Add the lemon juice and water to cover the chicken. Season with salt, spice mix and cinnamon.
– Cover with aluminium foil, and put in a pre-heated 200°C oven for 1 hour. Remove the foil and broil for an additional 15 minutes to crisp the chicken skin.
– Serve hot with rice.
