This Chicken Caesar’s Salad is perhaps one of the few salads ever that is also a favourite comfort food. Crispy lettuce, creamy dressing and a protein rich chicken – a great summer meal in itself!

Ingredients
Method
– Season the chicken breasts with salt and pepper, drizzle with oil and place in a roasting dish.
– Cover tightly and place in a 180°C pre-heated oven for 20 – 25 minutes.
– Remove the cover, and cook for an additional 5 minutes.
– If done, set aside to slightly cool.
– Slice chicken breasts into strips.
– Mix the crème fraiche, mayonnaise, salt, pepper, Worcestershire sauce, mustard, anchovies, parmesan, and garlic granules in a bowl and mix until well combined.
– Mix the lettuce, croutons and chicken in a large bowl.
– Top and toss with the dressing and serve.
