Carrot & Apple Muffins

Nothing like a delicious muffin to spruce up your child’s lunchbox. Delicious, filling and healthy! These Apple & Carrot Muffins are the best!

Carrot & Apple Muffins

Serves : 8 – 10
Prep Time : 10 – 15 MINUTES
Cooking Time : 25 MINUTES

Ingredients

  • Carrot – 250g, shredded
  • Green Apple – 1, shredded
  • Walnuts – 1/2 Cup, roughly chopped (optional)
  • Coconut – 1/4 Cup, shredded
  • All Purpose Flour – 2 Cups
  • Sugar – 3/4 Cup
  • Vegetable Oil – 1/2 Cup
  • Egg – 3, at room temperature
  • Vanilla Extract or Beans – 2 tsp
  • Baking Soda – 2 tsp
  • Salt – 1/2 tsp
  • Cinnamon – 1 tsp
  • Ground Nutmeg – 1/4 tsp
  • Method

    – Preheat the oven to 180°C. Lightly grease a muffin tray and sprinkle with flour.

    – Sift the flour, cinnamon, salt, baking soda and nutmeg into a bowl.

    – Thoroughly mix in the oil and sugar, either with your hands or electric mixer.

    – Add the eggs one at a time, mixing in each time. Add the vanilla and mix well.

    – Add the dry ingredients and fold using a spatula.

    – Add the carrots, apples, walnuts and coconut and fold using the spatula.

    – Pour the cake mixture into the muffin tray, 3/4 of the way up.

    – Place in the pre-heated oven for 25 minutes.

    – Allow to completely cool before serving.

    – Option to omit the walnuts if packing as a school snack.
