Broccoli Salad

A hearty and filling Salad that makes for a perfect light yet filling meal. The crunch from the Broccoli, the kick from the onion, the tangy sweetness from the cranberries and of course the cheese, all come together into a perfect bowl!

Broccoli Salad

Serves : 4 – 6
Prep Time : 15 MINUTES
Cooking Time : 5 MINUTES

Ingredients

  • Broccoli – 500g, cut into bite sized florets
  • Red/White Onion – 1/4 Cup, finely chopped
  • Cheddar Cheese – 1/4 Cup, shredded
  • Dried Cranberries – 1/4 Cup
  • Sunflower Seeds – 1/3 Cup
  • Maple Mustard Dressing (*)
  • Method

    – Toast the sunflower seeds in a pan over medium heat. Cook, stirring frequently until golden around the sides, approximately 5 minutes. Set aside to cool.

    – Place the broccoli, onion, cheese and cranberries in a serving bowl. Top with the seeds and drizzle with the maple mustard dressing.

    – Serve cool or at room temperature.
