Brent’s Sicilian Fish

Brent’s Sicilian Fish recipe is proof that healthy eating does not have to be boring. This Mediterranean dish is packed full of flavours, textures and nutrients. Enjoy with your favourite salad, potatoes or grains for a guilt-free healthy meal the whole family can enjoy.

Brent’s Sicilian Fish

Ingredients

  • Fish Fillet (of your choice) – 4, works well with sea bass, sea bream, cod or swordfish – washed and patted dry
  • Red/White Onion – 1 Small, finely chopped
  • Olive Oil – 2 tbsp
  • Green Capsicum – 1/4 Cup, finely chopped (or more of the red/yellow will do)
  • Red Capsicum – 1/4 Cup, finely chopped (yellow will also do)
  • Capers – 1 tbsp, rinsed and roughly chopped
  • Olives – 2 tbsp, finely chopped
  • Salt – to taste
  • Black Pepper – to taste
  • Method

    – Heat the oil in a large pan over medium – lower heat and sauté the onions.

    – Note: Take your time with this stage as you’d like the onions to have time to cook down and properly wilt. Do not let them brown\caramelise.

    – Add the chopped peppers and continue to sauté. Season with salt and pepper. Again, don’t allow the vegetables to caramelise.

    – Add all the capers and the olives.

    – Meanwhile, season the fish with salt and pepper, and reduce heat to low.

    – Arrange fish (skin side down) in the pan, and top with a third of the vegetable mixture. Cover with a piece of parchment paper, then cover with either foil or a lid.

    – Cook on low heat for 10 – 15 minutes until the fish is cooked.

    – Serve hot or warm with potatoes, rice, polenta or a side salad.
