Definitely one of yufeed’s most refreshing salads. With the high fibre content of the rocca leaves, along with the beetroot, walnuts cherry tomatoes and feta, you are guaranteed a salad that is delicious, as well as healthy and energy boosting.

Method
– Heat a pan over medium heat and dry roast the walnuts until fragrant. Then take off the heat, give them a rough chop and set aside to cool.
– Transfer all ingredients to a large bowl, toss to combine.
– Drizzle with the maple mustard vinaigrette (check pantry for recipe) and toss again to combine and evenly coat.
– Serve as a light meal or as a side to any main meal.
