Avocado Radish Salad

This Avocado Radish Salad is a meal that is packed full of flavours and textures, and works great as a summer meal. Be sure not to skip the pumpkin seeds to add that extra crunch, as well as a little added protein. Enjoy as a light meal on its own or pair with a side of roast salmon or grilled chicken.

Ingredients

  • Pumpkin Seeds – 1/2 Cup
  • Radish – 1/2 Cup, finely chopped
  • Spring Onion – 1/2 Cup, chopped
  • Fresh Coriander – 1/4 Cup chopped
  • Fresh Dill – 1/4 Cup, chopped
  • Fresh Jalapeno Peppers – 1, deseeded and chopped
  • Avocado – 4 Large, ripened
  • Lime Juice – 1/4 Cup
  • Olive Oil – 2 tbsp
  • Maple Syrup – 2 tsp
  • Salt – to taste
  • Red Chili Flakes – to taste
  • Lime Zest – From 1 lime, to garnish
  • Method

    – Heat a pan over medium heat and pour in the pumpkin seeds.

    – Dry roast the seeds for approximately 5 – 7 minutes or until you start to hear a popping sound, then take off the heat and set aside, allowing them to cool.

    – In the meantime, make the dressing by pouring the lime juice, olive oil, maple syrup, salt and lime zest into a jar. Seal tightly and shake well.

    – Place the avocadoes, radishes, spring onions, jalapeños, pumpkin seeds and herbs into a bowl.

    – Pour in the dressing and toss to combine.

    – Serve immediately as a light meal or a side to any main meal.
