Avocado Egg Salad

High in both protein and healthy fats, this delicious salad is definitely filling and an excellent suhoor option. Prepare in advance and keep in the fridge until ready to enjoy, no heating required!  

Avocado egg sandwich

Serves : 4
Prep Time : 10 MINUTES
Cooking Time : 5 – 7 MINUTES

Ingredients

  • Avocado – 1 Medium or Large, ripe
  • Egg – 6 Hardboiled, chopped
  • Spring Onion – 1, finely chopped
  • Lemon Juice – 1/2 tbsp
  • Salt – 1/2 tsp, or according to taste
  • Black Pepper – 1/4 tsp
  • Hard Boiled Eggs (*)
  • Method

    – In a large bowl, mash the avocado until desired consistency is reached.

    – Gently mix in the eggs, green onion, lemon juice, salt and pepper.

    – Spread over toasted sourdough or bread of choice and serve.
