A delicious blend of aubergines, herbs and aromatics makes for a delicious and healthy meal. Enjoy with a side of bread or on its own for a light, yet satisfying weekday lunch or dinner. Works great as a side dish for gatherings as well!

Method
– Arrange the aubergine on a large plate or tray, sprinkle and toss with 1 teaspoon of salt and set aside for 30 minutes.
– In a large frying pan over medium high heat, add the vegetable oil, pat dry the aubergine with a paper towel, and fry on each side for 2 – 3 minutes, until golden brown. Transfer to a paper towel to drain any excess oil.
– Place the aubergines on a serving platter and use a fork to separate them into slightly thinner slices.
– Transfer the garlic chili peppers and basil to a mortar and pestle or mini food processor, add 1/2 teaspoon of salt and pound or blend into a paste-like consistency. Add the lemon juice over the aubergine slices, stir and toss gently.
– Serve with Arabic bread.
