Arugula ‘Jirjir’ Soup

This soup is without a doubt a health bomb. With arugula being high in fibre and full of vitamins and minerals, and paired with the health benefits of a homemade broth, you really can’t go wrong.

Serves : 6 – 8
Prep Time : 10 – 15 MINUTES
Cooking Time : 20 – 25 MINUTES

Ingredients

  • Butter (unsalted) – 1 tbsp
  • Olive Oil – 1 tbsp
  • Red/White Onion – 1 Small, diced
  • Potato – 1 Medium, cubed
  • Arugula – 3 Bunches
  • Dried Tarragon – 1 tsp
  • Salt – to taste
  • Black Pepper – to taste
  • Vegetable Stock – 8 Cups
  • Cooking Cream – 2 tbsp, to dollop (optional)
  • Method

    – Heat the oil and butter in a large pot and sauté the onion until translucent and fragrant.

    – Add the potatoes, jirjir, tarragon, salt and pepper and mix until combined.

    – Pour in the stock and bring to a boil. Cover and reduce to a simmer, and let cook on low for 20 minutes. Taste and add more salt if needed.

    – Take off the heat, and blend the ingredients using an immersion blender until you reach the desired consistency.

    – Garnish with some fresh jirjir or a dollop of cream, and serve with bread.
