Aloo (Potato) Sandwich

Aloo (Potato) Sandwich is an Indian treat, that is also comfort food at its best! What’s better than two slices of your favourite bread, topped with potatoes, spices, chili pepper and butter? Be sure to toast before serving, and enjoy with a cooling side dish, such as chopped tomatoes or a yogurt dip.

Aloo (Potato) Sandwich

Cooking Time : 20 – 25 MINUTES

Ingredients

  • Potato – 2 pc, Medium, peeled and cubed
  • Fresh Green Chili Pepper – 2 pc, chopped (optional)
  • Ginger – 1 tsp, grated
  • Chili Powder – 1/4 tsp, optional
  • Garam Masala – 1/2 tsp
  • Turmeric Powder – 1/4 tsp
  • Lemon Juice – 2 tbsp
  • Fresh Coriander – to garnish, finely chopped
  • Sliced Bread – 4 pc
  • Butter (unsalted) – 2 tbsp
  • Salt – to taste
  • Method

    – Boil the potatoes until very tender and completely cooked through. Strain and set aside to cool.

    – Mix the ginger, garam masala, chili powder, turmeric, salt and green chili in a bowl until well combined.

    – Add the cooled potatoes and mash into the mixture. Once mashed, mix until well combined. Taste and add salt if needed.

    – Finish with the coriander leaves and a drizzle of the lemon juice and mix to combine.

    – Spread the butter on the bread slices, then spread a generous amount of the potato mixture and top with the second slice. Repeat to make two sandwiches.

    – Toast in a sandwich press until golden and crispy.

    – Serve hot with a side of yogurt and/or chutney.
