Method
– Heat the butter in a pan over medium heat.
– Add the eggs and use a spatula to scramble the eggs, and season with salt just as they are starting to set, but are still mostly raw.
– Add the spring onions and red chili flakes. Toss until eggs are cooked to your liking, then transfer to a plate.
– Serve warm with a side of bread and sliced tomatoes.
