AJ’s Lentil Salad

AJ’s Lentil Salad

Ingredients

  • Canned Brown Lentils – 1 Can, drained oand rinsed (green lentils will also do)
  • Onion – 1 pc, Small, finely chopped
  • Avocado – 1 pc, Small, cubed
  • Radish – 2 pc, Medium, thinly sliced, preferably white radish
  • Cherry Tomatoes – 100g, halved
  • Fresh Mint – Handful, chopped
  • Mustard – 1 tbsp, preferably Dijon
  • Olive Oil – 1/4 Cup
  • Lemon – 1 pc, juiced
  • Pepperoncini – 1/2 tsp, finely chopped
  • Salt – 1/2 tsp, or to taste
  • Method

    – Transfer all the salad ingredients into a large bowl.

    – Drizzle with the dressing and toss to combine.

    – Taste and add more salt if needed.

    – Serve at room temperature as a protein packed vegan meal.
