AJ’s Lentil Salad

If you’re looking for a protein fix, then yufeed’s lentil salad is the meal for you! The pairing of the lentils and all the fresh ingredients will very likely leave you reaching over for seconds, but that’s okay! Just be sure to remember the dressing, and you’re good to go.

AJ’s Lentil Salad

Ingredients

  • Brown Lentils – 1 Can, drained or rinsed (green lentils will also do)
  • Red Onion – 1/4 Cup, finely diced
  • Avocado – Half, cubed
  • Radish – 1/2 Cup, thinly sliced, preferably white radish
  • Cherry Tomatoes – 100g, halved
  • Fresh Mint – Handful, roughly chopped
  • Mustard – 1 tbsp, preferably Dijon
  • Olive Oil – 1/4 Cup
  • Lemon – 1, juiced
  • Pepperoncini – 1/2 tsp, finely chopped
  • Salt – 1/2 tsp, or to taste
  • Method

    – Transfer all the salad ingredients into a large bowl.

    – Drizzle with the dressing and toss to combine.

    – Taste and add more salt if needed.

    – Serve at room temperature as a protein packed vegan meal.
